It focuses on developing lipid technologies for the food industry. Alianza Team collaborated with IBM to use quantum computing software to optimize the use and stability of triglycerides in margarine and shortening production, designing a product with a texture identical to conventional products and an optimal melting point for bakery uses. The company developed Oleum, a platform based on artificial intelligence and quantum computing built to change the design of lipid products. The collaboration with UNAL brought together three stakeholders, academia, industry, and government, in a pioneering effort to integrate quantum computing into Colombia's food industry and advance practical quantum applications for food manufacturing and product optimization.
